{"id":6544,"date":"2015-02-20T11:48:06","date_gmt":"2015-02-20T15:48:06","guid":{"rendered":"http:\/\/www.bwsailing.com\/?p=6544"},"modified":"2015-02-20T11:48:06","modified_gmt":"2015-02-20T15:48:06","slug":"never-without-bread","status":"publish","type":"post","link":"https:\/\/www.bwsailing.com\/bw\/never-without-bread\/","title":{"rendered":"Never Without Bread"},"content":{"rendered":"<p><em>A foolproof recipe to keep your crew fed at sea or to share at that next beach-side potluck\u00a0 (published August 2014)<\/em><\/p>\n<p>As a bit of a tomboy, I\u2019ve always felt somewhat deficient around women who can knit hats and effortlessly produce pastries, all without mussing their glossy hair \u00e0 la Nigella Lawson. So when I put to sea in a primitive sailboat without even an electric anchor windlass, let alone an inverter capable of powering a hair dryer, I thought I\u2019d found a good excuse for not being Nigella. Instead of testing my perfect caramel flan while letting my smartphone softly illuminate my lightly powdered cheeks and rouged lips, I crawled into the lazarette of our 38 foot classic\u2014and ancient\u2014Sparkman &amp; Stephens cutter <em>Heretic<\/em> to replace the equally ancient propane hoses.<\/p>\n<p>Afterwards, I generally produced one-pot chilis or paellas. Then I met cruising women who baked cakes and sewed their own courtesy flags. The best I could do with a needle was to stitch our aging mainsail back together. I actually enjoyed baking, but I didn\u2019t have an oven so I couldn\u2019t compete with their beach potluck contributions.<\/p>\n<p>My husband and I did fine without refrigeration or baked goods for the first three years of our circumnavigation, but one day we were out of bread and rather peeved about it. We were anchored within a mile of the town on Cocos Keeling atoll in the Indian Ocean, which, despite its remote location 2,000 miles from Australia, does sell bread. But consistent 25-knot winds discouraged frequent trips in our eight-foot rowing dinghy. So I opened up Hal Roth\u2019s <em>How to Sail Around the World<\/em>, where I found his bread recipe. The recipe is for a pressure-cooker loaf, but our pressure-cooker hadn\u2019t worked properly for years, so I adapted it for my hard-anodized frying pan.<\/p>\n<p>The loaf was so tasty\u2014and so simple to make\u2014that we were never without bread again, even on the notoriously windy crossing to South Africa. I often experimented with sweet and savory variations and dreamed up two of my favorites on precisely that passage.<\/p>\n<p><em>Recipe: Stovetop Baked Bread<\/em><\/p>\n<p>Serves: Two for three days or more.<br \/>\nPrep Time: 25 minutes.\u00a0 Total time, start to finish (much of it unattended): 3 hours, 40 minutes.<br \/>\nSpecial Equipment: Heavy frying pan with lid, preferably hard-anodized aluminum. Flame-tamer.<\/p>\n<p>1 \u00bd cups lukewarm water (between 105\u00b0 and 115\u00b0 F)<br \/>\n1 tablespoon sugar<br \/>\n2 teaspoons salt<br \/>\n1 package active dry yeast<br \/>\n2 cups white flour<br \/>\n2 cups whole wheat flour<a href=\"http:\/\/www.bwsailing.com\/wp-content\/uploads\/2015\/02\/Ellen-with-the-sweet-loaf-en-route-to-South-Africa.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-6547\" src=\"http:\/\/www.bwsailing.com\/wp-content\/uploads\/2015\/02\/Ellen-with-the-sweet-loaf-en-route-to-South-Africa.jpg\" alt=\"OLYMPUS DIGITAL CAMERA\" width=\"324\" height=\"432\" srcset=\"https:\/\/www.bwsailing.com\/bw\/wp-content\/uploads\/2015\/02\/Ellen-with-the-sweet-loaf-en-route-to-South-Africa.jpg 324w, https:\/\/www.bwsailing.com\/bw\/wp-content\/uploads\/2015\/02\/Ellen-with-the-sweet-loaf-en-route-to-South-Africa-225x300.jpg 225w\" sizes=\"auto, (max-width: 324px) 100vw, 324px\" \/><\/a><br \/>\nButter (for greasing the pan)<br \/>\n2 tablespoons uncooked oatmeal<\/p>\n<p>Method:<br \/>\nIn a large mixing bowl, dissolve sugar, salt and yeast into the warm water. Let stand 5 minutes. Stir in flour with a wooden spoon.\u00a0 Knead the dough for at least 5 minutes, preferably 10.<br \/>\nCover bowl with a clean dishtowel and place it in a warm corner of the boat, away from drafts. Let the dough rise until doubled, about 1.5 hours. \u00a0\u00a0 \u00a0Grease a large, deep and heavy frying pan. Hard-anodized aluminum or cast iron is best. Teflon won\u2019t retain enough heat. Sprinkle the greased pan with uncooked oatmeal.<br \/>\nPunch down the dough and place it in the pan. Cover and let rise again until doubled, about one hour.<\/p>\n<p>Place a heat distributor (flame-tamer) on your gas burner and put the pan on top. Turn the burner on low. Cover the pan with its lid and insulate the lid with potholders to retain heat. Bake for 45 minutes to an hour.\u00a0 When the bread is done, a knife stuck into it will come out clean.<\/p>\n<p>Note: This can also be baked in an oven. Just grease a traditional bread pan instead of the saut\u00e9 pan and bake at 400\u00b0F for one hour.<\/p>\n<p>Sweet and Savory Variations:<\/p>\n<p>Sweet: add a little more sugar to the initial yeast mixture and add a few handfuls of raisins, chopped dried figs and chopped walnuts to the dough before kneading. Omit the oatmeal coating on the pan.<br \/>\nSavory: add eight to 10 chopped and pitted black olives and a handful of fresh rosemary (stripped from the stems) to the dough. Include the oatmeal coating.
