Spring Asparagus Salad with Feta

(Food and Wine) – Its springtime and that means there is plenty of asparagus at the market. This recipe mixes fresh and blanched asparagus with peas, pea shoots and edamame along with feta cheese. While it may be hard to find pea shoots right now as grocery stores are sometimes having difficulty with supply lines, you can substitue the shoots with baby bok choy, spinach or watercress.
