As the summer sailing and racing season heats up you are bound to find your way into a group of sailors with this cocktail’s main ingredient – Mount Gay.
Pride of Barbados
1½ oz. Mount Gay (XO) Extra Old Rum
½ oz. Mount Gay Eclipse Rum
1 oz. Fresh Grapefruit Juice
¾ oz. Fresh Lime Juice
1 oz. Allspice Syrup
4 drops Vanilla Extract
1 dash Angostura Bitters
“Mix above ingredients in shaker with 6 oz crushed ice. Pour into glass. (For Allspice syrup, boil 1 tbsp allspice berries in 4 oz. water, add 8 oz. sugar and stir. Let cool 30 mins. Strain syrup into another container and discard the berries.)”
