Nothing Says Caribbean Cooking Like Spicy, Delicious Jerk Chicken Fresh off the Grill

Eating like a local in the Caribbean is a fun way to really get the flavor, literally, of what life in the tropics is all about. You’ll eat a lot of seafood, plantains, conch salads and roasted or barbecued pork. But it is the jerk chicken that will really make your taste buds sit up and take notice. And you can’t just throw some spices in a bowl and come up with true jerk marinade. You need the real thing.
