Grilled Elote Flatbread

(tasteofhome.com) – This is a fun twist on elote, the classic Mexican corn dish. Typically elote is a grilled corn cob garnished with lime, cheese and cilantro and brushed with mayonnaise. Here the grilled corn is cut from the cob. Mayonnaise, cheese, cilantro, lime juice, chili powder and pepper are mixed in with the corn and placed atop a warm flatbread. Read more.
